Ingredients for the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Drink (makes 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Method

Making the Syrup: Place the listed components into a pot, bring to a gentle boil, mixing to dissolve. After that, turn off the stove and leave to cool down completely. Transfer into an sealable bottle, close it and store chilled, it will last for about four weeks.

For the Batch Mix: Mix all the liquids into one big jug, let it rest for 60 minutes, then pass it through preferably using cheesecloth, so it's fully clarified.

For serving: Pour 85ml of your batch mix into a cocktail shaker filled with ice, and stir carefully for one minute until cold. Strain to a chilled martini glass or equivalent, top with some cranberries adding the final touch with a quick spritz with the mandarin essence over the drink.
